WHere is an easy version of a cocktail found on the seasonal menu. Designed as a party-sized premix that's packed full of essence associated with holiday season, rendering it ideal for your festive gathering. Any leftover citrus syrup to use in morning drinks, desserts, or to make another batch of bikinis.
The Bikini Cocktail
Yields 10 people
To make the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
Making the Cordial: Put the listed items into a pot, bring to a simmer, agitating to dissolve. Next, remove from the stove and leave to cool down completely. Pour into an sealable bottle, seal and store chilled, where it will keep for around four weeks.
Preparing the Batch Mix: Combine the specified liquids in a large bottle, leave to sit for an hour, then filter it , ideally through cheesecloth, so it's perfectly clear.
For serving: Measure 85ml of your batch mix into your mixing glass containing ice, gently stirring gently for one minute until cold. Filter to a cold coupe glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil over the drink.
